Asian Slaw with Ginger Peanut Dressing

Ingredients
- 8 cups or 16 ounce pkg of coleslaw mix with carrots
- 3 to 4 medium scallions, sliced 1/4th inch
- [Dressing]
- 2 tablespoons creamy peanut butter
- 1 tablespoon fresh ginger, minced
- 3 tablespoons rice vinegar
- 1 teaspoon honey
- 2 tablespoons Hellmann's Light Mayonnaise
- 1/8 teaspoon ground cayenne pepper
- 1 cup chopped peanuts, toasted (optional)
Preparation
Step 1
Make the dressing by combining all of the ingredients in a small processor or bowl. Set aside.
Add the dressing to the slaw mix and scallions and toss well. Season to taste.
If desired, top with toasted chopped peanuts.
