  • 8 cups or 16 ounce pkg of coleslaw mix with carrots
  • 3 to 4 medium scallions, sliced 1/4th inch
  • [Dressing]
  • 2 tablespoons creamy peanut butter
  • 1 tablespoon fresh ginger, minced
  • 3 tablespoons rice vinegar
  • 1 teaspoon honey
  • 2 tablespoons Hellmann's Light Mayonnaise
  • 1/8 teaspoon ground cayenne pepper
  • 1 cup chopped peanuts, toasted (optional)

Step 1

Make the dressing by combining all of the ingredients in a small processor or bowl. Set aside.
Add the dressing to the slaw mix and scallions and toss well. Season to taste.
If desired, top with toasted chopped peanuts.
